Coffee + Cocoa = Delicious

Okay, to be truthful I'm not talking about that chocolate syrup stuff or powdered cocoa you buy in the store. I'm talking about the honest to God real cocoa. My mother's family in Savai'i grows, buys, and processes cocoa, and they process it into rich, wholesome goodness. Add hot water and some of the cocoa paste to a mortar and pestle and grind until smooth. Then add more hot water and simmer and continue to use the pestle to break up any bits that stick together. Within minutes you'll have real cocoa the way it was meant to be drunk. But you're not quite done yet.

Simmer for about 15 to 20 minutes on a very low heat and remove and allow to cool. If you didn't add too much water, the resulting fluid should be a very strong, flavorful cocoa concentrate that stirs in real easy to a cup of coffee. Start up the percolator or coffee maker, pour yourself a cup of coffee, and then add a couple tablespoons of your cocoa concoction.

The next step is the hard part... Relax and enjoy the fruits of your labor. Refrigerate or freeze the remainder and you're all good.

 

(I bet I could make ice cubes out of the cocoa and just drop them into the piping hot coffee... Instant Kofe Koko!)
